No bake CHOCOLATE FRUIT AND NUT ENERGY BARS

Frankie is anaphylactic for peanuts and so many store bought bars are either full of peanuts and/or way too many rolled oats. I wanted to try make something simple with our Spectacular diced fruit and Sticky Quince Syrup.

Ingredients and steps:

1. Mix in a bowl:

  • 1 cup almonds and pecans each
  • 1 cup of mixed pumpkin, sunflower and hemp seeds
  • 1 cup of rolled oats
  • 1 cup of our Spectacular dried diced fruit
  • 1 cup of shredded coconut

2. For the syrup warm up in a saucepan :

  • 1/2 cup raw honey
  •  1/3 cup Sticky Quince syrup
  • 3 tsp pink salt flakes (I use Murray River Salt)

3. Pour the syrup over the nut mixture and stir well to combine.

4. Press the mixture firmly into a lined baking tray.

5. Put the tray in the freezer for at least 2 hours to set.

6. Once set, cut into bars and dip each bar in melted dark chocolate, then sprinkle with a touch of shredded coconut.

7. Put the bars back in the freezer for 15 minutes to let the chocolate harden.

8. Enjoy your chocolate fruit nut bars. No nasties and great after school snack.
